Natural fermentation method utilizing seasonal ingredients

On top of lactic acid bacteria, various nutrients are blended at their ideal states including amino acids, peptides, vitamins, minerals, organic acids, dietary fibers and oligosaccharides.

 In “OM-X”, a maximum 92 kinds of plant based ingredients are fermented and matured using 12 kinds of LAB over a time period of 3 to 5 years. Locally grown food ingredients from each of the four seasons are added into fermentation vats in the appropriate order and fermentation begins when LAB are added. By repeating this process, LAB repeatedly ferments while accumulating various nutrients e.g. amino acids, peptides, vitamins, minerals, organic acids, dietary fibers, oligosaccharides, polyphenol and flavonoid.  Many of us realize that vegetables and fruit are essential when we think about our health and beauty. However, not only has vegetable intake continued to decline year after year, but the number of people taking fruit regularly has as well. Our persistence in probiotic bacteria

For production of high quality fermented extract, we use “TH10”, a proprietary, highly functional probiotic bacterium with published study data around the world. 

 Fermentation is a process that newly produces functional substances that are beneficial to our health from ingredients using the power of enzymes of microorganisms like yeasts and Bacillus natto. Inside fermented food products, these bacterial enzymes generate amino acids, vitamins, minerals, sugars and organic acids from the ingredients. This diverse nutrition supports our metabolic function and works as an energy source. However, the fermentation does not proceed properly if the microorganisms used are of poor capability as a fermenter. Not only does it not produce functional substances with benefits, but microorganisms without proper evidence of their functionalities could cause putrefaction.
