Isolation and characterization of brown pigments in fermented fruits and vegetables
We have previously conducted a study to isolate brown pigments from a naturally fermented vegetable extract and analyze its characteristics. The result showed the fact that the amount of brown pigments in the extract increases with the duration of fermentation and maturation periods, and its food functionality improves. In current study, we separated water-soluble fractions by gel filtration chromatography. The study results show the increases of brown pigments and proteins, and improvement of the DPPH radical scavenging activity in the fractions of molecular weight approximately greater than 5,000 with the duration of fermentation and maturation periods.

Alteration of the amount of brown pigments in the extract with the duration of fermentation periods.
A fermented vegetable food is known its functionalities, including an antioxidant activity and a suppressive action on blood pressure elevation. In this study, we examined an antioxidant activity and a suppressive action on blood pressure elevation by using a fermented vegetable food that is a combination of several tens of plant ingredients fermented and matured by lactic acid bacteria for five years. We took some samples of the fermented extract after 6 months, 2 years and 5 years of its fermentation. As a result from the test on food functionality, the amount of brown pigments in the extract increased with the duration of fermentation and maturation periods. At the same time, the increase of the DPPH radical scavenging activity and the Angiotensin I Converting Enzyme (ACE) inhibitory activity were observed.

Safety and tolerability of probiotics in dengue hemorrhagic fever.
Dengue Hemorrhagic Fever (DHF) is a mosquito-borne infection and characterized by spontaneous hemorrhage with thrombocytopenia. The infection is observed from childhood among South-East Asian countries and has become problems. The male and female patients with DHF stageII (average age: 7.92 years old) were given 2 capsules of OM-X a day. We observed statistically significant improvements, including the regulation of hematocrit levels and the increment of blood platelet counts. No aggravation of symptoms were found.
